Almost every new grower stares at a freshly cut tray and wonders whether to keep watering it. Here's the botanical reason most microgreens never come back, the two genuine exceptions, and what a second cut is actually worth.

It's one of the most reasonable questions a beginner can ask. You've just cut a beautiful tray of radish microgreens. The roots are still alive in the medium, the tray is still damp, and throwing it all away feels wasteful. So you leave it on the windowsill, keep watering, and wait.

A week later, nothing. Maybe a few sad, pale stubs. Most likely a bit of mould creeping across the surface.

I've had that exact tray sitting on my own shelf more than once. The disappointment isn't your fault, and it isn't a mistake in your technique — it's simply how these plants are built. Once you understand the botany behind it, the answer stops being frustrating and starts being useful: you'll know precisely which trays are worth keeping, and which ones belong in the compost the same day.

The Quick Answer

If you read nothing else: most microgreens do not regrow after cutting, and this is normal. They are a single-harvest crop by design. There are exactly two practical exceptions — pea shoots and wheatgrass — and even those give you a noticeably smaller, slower, lower-quality second cut. Everything else (sunflower, radish, broccoli, kale, mustard, amaranth, cabbage) is finished the moment your scissors close.

Why Most Microgreens Can't Regrow

There are three reasons stacked on top of each other, and together they make regrowth almost impossible. Understanding them is what turns this from a mystery into a rule you can apply to any variety.

1. The cut removes the growing point

Plants don't grow from just anywhere — they grow from a specific tissue called the apical meristem, the plant's main growing point. In a young dicot seedling, that growing point sits right at the top of the stem, tucked between the two cotyledons (seed leaves). When you harvest a microgreen by cutting above the medium, you remove the apical meristem along with the stem. There is no engine left to build new tissue from.

2. The seed's energy is already spent

Until the first true leaves appear, a seedling isn't feeding itself — it's living entirely on energy stored inside the seed. We harvest microgreens at the cotyledon stage, precisely when flavour and nutrient density peak. That timing means the seed's reserves have already been poured into the first flush of growth. The plant has no savings account left to fund a comeback.

3. No leaves means no photosynthesis

Even if a plant had reserves, it would need to switch to making its own food. Photosynthesis needs leaf area to capture light — and after a close cut, there's essentially no functional leaf tissue left on the tray. The plant cannot power new growth because it cannot produce energy.

🔬 The Rule in One Line

A microgreen can only regrow if living leaf tissue and a growing point survive the cut. In almost every variety, harvesting at the cotyledon stage removes both at once. That single fact predicts the behaviour of nearly every tray you'll ever grow.

The Two Real Exceptions

🫛 Pea shoots — the genuine one

Peas are the exception most growers actually encounter. They work for two structural reasons. First, a pea is a large seed with substantially bigger energy reserves than a tiny brassica seed. Second, and more importantly, pea shoots grow tall with nodes along the stem — and those nodes can push out lateral shoots even after the top has been removed. Cut a pea tray high, leaving a node and a leaf or two intact, and you may get a genuine second flush in roughly two weeks.

🌾 Wheatgrass — a different plant entirely

Wheatgrass regrows for a reason that has nothing to do with luck: it's a grass, a monocot. Grasses grow from the base rather than the tip — the same reason a lawn survives mowing. The crop is essentially all leaf tissue, and the growth zone sits down near the medium, safely below your scissors. Wheatgrass will usually give you a second cut, though it tends to be tougher and less sweet than the first.

Sunflower is a large seed too, so growers often assume it behaves like pea. It doesn't. Sunflower grows as a single stem with its growing point between the cotyledons and no useful lower nodes — so the harvest cut ends the plant outright. Is a Second Cut Worth It?

Here's the part most articles skip. Even when regrowth does happen, you should know what you're actually signing up for.

  • Yield falls sharply. A pea second cut is commonly around half the first harvest — and some commercial growers report drops far steeper than that. A third cut, if it comes at all, is smaller again.
  • It's slow. Expect roughly 14 days for a pea flush. In that same window you could have grown an entirely fresh tray from seed, at full yield.
  • Quality drops. Regrown shoots are typically thinner, paler, more uneven, and less sweet than the first flush.
  • Mould risk climbs. This is the one that matters most. A cut tray is full of decaying stem stubs and dying roots sitting in a warm, damp medium — ideal fuel for fungi. If you're going to keep a tray, airflow and bottom watering become non-negotiable (see our mould prevention guide).
⚠️ Never Try This With a Cut Tray

Don't attempt a second harvest on a tray that already showed mould, damping-off, or a sour smell before the first cut. Those problems don't reset — they accelerate in the leftover plant debris. Compost it and sanitise the tray instead.

How to Try It Properly

If you have a healthy pea or wheatgrass tray and want to attempt a second cut, do it deliberately rather than hopefully:

  1. Cut high, not low. This is the whole game. Leave at least one node and a leaf or two on the stem. Cut at the base and there is nothing left to regrow from.
  2. Keep it in good light. Any surviving leaf tissue now has to feed the entire plant, so light is what powers the comeback.
  3. Water from below only. Never wet the cut stems — open wounds plus standing moisture is exactly how a tray turns mouldy.
  4. Increase airflow. A small fan across the tray is the single most effective thing you can do at this stage.
  5. Set a deadline. If you see no meaningful new growth within about 10 days, compost it. Waiting longer only risks contaminating your growing space with spores.

The Better Method: Succession Sowing

Here's the honest professional take: almost no commercial grower relies on regrowth. They succession sow instead — starting a new tray every few days so there's always one approaching harvest.

The maths is simple. A radish tray goes from seed to harvest in about a week; broccoli in 10–12 days; pea shoots in 10–14. Waiting two weeks for a half-sized, lower-quality second cut costs you the same time as growing a completely fresh tray at full yield and full flavour. Regrowth isn't a shortcut — it's usually the slower path.

Start one small tray at a fixed point each week and you'll have a continuous supply without ever thinking about regrowth again. It also keeps your rotation clean: each tray gets fresh medium, sanitised equipment, and no accumulated fungal pressure.

Sow one tray every Sunday. Within a fortnight you'll be harvesting one tray while the next is already under light — fresh greens on a rolling basis, and the used medium goes straight to the compost with no guesswork.
