As someone who grows these plants for a living, I find those claims embarrassing — because the real, measured story is impressive enough without inventing anything.

Here's that real story: microgreens are densely packed with several nutrients that are scientifically recognised as necessary for the normal functioning of your immune system. Not magic. Not medicine. Concentrated nutrition, measured in laboratories, from plants you can grow on a windowsill in ten days. Let's go through what's actually in them — and what that does and doesn't mean.

Your immune system isn't a muscle you pump up — it's a finely balanced network that works best when it's properly supplied, not "boosted." What nutrition science actually says is more modest and more useful: certain nutrients — vitamin C, vitamin A, folate, iron, zinc, vitamin B6 and others — contribute to the normal function of the immune system. That careful wording isn't mine; it's the standard established by the European Food Safety Authority (EFSA), which reviews the evidence behind every nutrition claim allowed in the EU.

So the honest question isn't "do microgreens boost immunity?" It's: do microgreens deliver meaningful amounts of the nutrients your immune system needs to function normally? And the answer, backed by laboratory analysis, is yes — often in remarkably concentrated form.

The Immune-Relevant Nutrients in Microgreens

The key piece of research here is the landmark 2012 USDA study by Xiao and colleagues, which analysed 25 varieties of microgreens and compared their nutrient concentrations to mature vegetables. The consistent finding: microgreens, harvested at the cotyledon stage when the young plant is at peak nutrient density, frequently contain several times higher concentrations of vitamins C, E and K and carotenoids than their grown-up counterparts.

Of the nutrients EFSA recognises as contributing to normal immune function, microgreens are relevant sources of four in particular: vitamin C, vitamin A (via beta-carotene), folate, and — in smaller but real amounts — iron and zinc. Let's take them one at a time.

Vitamin C: The Headline Act

Vitamin C is the best-documented nutrient in the microgreens research, partly because it's measurable and partly because the numbers are striking.

In the USDA analysis, red cabbage microgreens topped the chart at around 147 mg of vitamin C per 100 g of fresh weight — roughly six times the level in mature red cabbage. For context, an orange contains about 53 mg per 100 g. Radish microgreens measured around 96 mg per 100 g, nearly seven times more than mature radish. Independent analyses of brassica microgreens (broccoli, kale, mustard, radish) consistently find meaningful vitamin C levels in the 31–56 mg per 100 g range even at the lower end.

Why does this matter for immunity? Vitamin C contributes to the normal function of the immune system — it's involved in the function of immune cells and in protecting cells from oxidative stress. The adult reference intake is roughly 80–90 mg per day, which means a generous handful of red cabbage or radish microgreens makes a genuine, measurable contribution to hitting that number — from fresh food rather than a tablet.

Vitamin A, E, Folate & Minerals

Vitamin A (beta-carotene)

The USDA study found cilantro microgreens among the richest in carotenoids, with red cabbage microgreens also delivering high beta-carotene (around 11.5 mg per 100 g). Colourful varieties generally signal carotenoid content: the deeper the pigment, the more there tends to be.

Vitamin E

Vitamin E contributes to the protection of cells from oxidative stress — relevant because immune activity generates oxidative by-products. Here the numbers get dramatic: red cabbage microgreens contained roughly 40 times the vitamin E of mature red cabbage in the USDA analysis, and green daikon radish microgreens ranked highest overall. Folate, iron and zinc

Folate, iron and zinc each contribute to the normal function of the immune system, and microgreens supply all three in modest but useful amounts. A practical tip from nutrition research: plant-based (non-heme) iron is absorbed better when eaten alongside vitamin C — which makes a mixed microgreens salad (say, amaranth or beet for iron plus red cabbage or radish for vitamin C) a smarter combination than any single variety alone.

What Microgreens Can't Do — And Who Should Be Careful

Credibility cuts both ways, so here are the limits, stated plainly:

  • They won't prevent or cure infections. No food will. Adequate nutrition supports a normally functioning immune system; it doesn't create a force field. Sleep, exercise, stress and vaccination status all matter enormously.
  • They're a garnish-sized food. A typical serving is 25–70 g, not a plateful. The concentrations are high, but total intake depends on actually eating them regularly — which is why the practical section below matters more than any single number.
  • One real caution: vitamin K. Microgreens — especially brassicas — are rich in vitamin K, which can interfere with blood-thinning medication (warfarin/coumarin anticoagulants). If you take these medicines, speak to your doctor before significantly increasing your intake of microgreens or any leafy greens.

Practical Ways to Eat Them Daily

Nutrient tables are useless if the greens sit in the fridge. The realistic goal is a small handful most days, and the easiest way to get there is to stop treating microgreens as a special-occasion garnish:

  • The default topper: keep a live tray on the windowsill and cut a handful over eggs, soups, sandwiches and grain bowls — no recipe required.
  • The smoothie handful: mild varieties like broccoli or pea shoots disappear into a fruit smoothie while keeping every water-soluble vitamin intact (no heat involved).
  • The smart salad base: mix an iron-rich variety (beet, amaranth) with a vitamin C powerhouse (red cabbage, radish) — the combination improves iron absorption.
  • Add after cooking, not during: vitamin C is heat-sensitive. Stir microgreens into warm dishes at the very end, off the heat, to keep the numbers you read above.
